Recipe: Prawn and basil pasta

Tomato and Basil salad
Ingredients : 453 gms rotini pasta, 4 plum tomatoes, 3-4 cloves garlic, 1 tsp salt, black pepper to taste, ½ cup olive oil, fresh basil leaf (chopped) and ¼ cup grated parmesan cheese
Method: Mix together the tomatoes, garlic, salt, pepper, olive oil and basil. Refrigerate this for approximately 2 hours. In the meantime, cook the pasta. Rinse under cold water and drain. Mix the pasta with the tomato mixture and mix until well combined. Sprinkle with parmesan cheese. You can also serve this with extra Parmesan cheese, if required.
Prawn and Basil pasta
Ingredients: 375 gms dry linguine pasta, 2 tbsp extra light olive oil, 650 gms king-sized prawns, 1 large fresh red chilli, 2 garlic cloves, 5 ripe medium-sized tomatoes, 6 green shallots, ½ cup finely shredded fresh basil and salt and freshly ground black pepper to taste
Method: Cook the pasta in a large saucepan of salted boiling water. Drain well. Next, heat 2 tsp of olive oil in a large frying pan over medium heat. Add the prawns and cook - stir occasionally for 3 minutes until the prawns change their colour. Add the chilli and garlic and cook. Still for another 3 minutes. Add the pasta, tomatoes, shallots and basil to the prawns and gently toss until well combined and heated through. Drizzle with the remaining oil and gently toss until well combined. Divide the linguine among serving bowls and season with salt and pepper. Serve immediately.
