Winter is here; a season when we lose count of the number of cups of tea or coffee gulped down in a day or probably end up instructing ourselves to exercise for half an hour more before happily munching on another round of fried snacks in the evenings.

Winter gives us the reason to make merry, lets us find excuses to drop in at a friend's place for a hot cup of 'chai' and crispy aloo pakoras at the terrace and sometimes don the chef's hat on weekend mornings/evenings to rustle up a not-so calorie-free meal.

Chef Diwas Wadhera shares with us some delicious recipes that can be easily tried at home and relished among a group of friends or family.

Recipe: Pan-fried Pomfret

Ingredients

Pomfret fish 500 gm

Ginger garlic paste 60 gm

Salt 15 gm

Corn flour 80 gm

Deggi mirch 20 gm

Haldi powder 15 gm

Besan 10 gm

Ginger garlic (Chopped) 50 gm

Lemon 50 gm

Mushroom 50 gm

Ginger slices 20 gm

Ajwain 5 gm

Coriander (Chopped) 10 gm

Spring onion 10 gm

Oil 70 ml

Lettuce 50 gm

Cucumber 100 gm

Tomato 75 gm

Onion 100 gm

Mint chutney 100 gm

Method

-Clean & wash pomfret, trim and clean the pomfret carefully from inside.

-Allow the first marination in salt, lemon juice, ginger-garlic paste, deggimirchi and haldi powder.

-Prepare butter with cornflour, besan, ajwain, salt and coriander (chopped).

-Pan fry the pomfret in little oil for about 10-12 minutes.

-Serve hot with mushroom sauce and fresh salad.

Recipe: Mozzarella naan

Ingredients

Flour 1000 gm

Sugar 50 gm

Salt 20 gm

Egg 1 (no.)

Curd 50 gm

Milk 50 ml

Refined oil 40 ml

Mozzarella 500 gm

Method

Sieve flour thrice; add sugar, salt, egg, curd, milk, oil to it.

Prepare soft dough & allow it to rest for half an hour.

Grate the mozzarella cheese, stuff it in naan, flatten the dough into an eye drop shape & cook it in a clay oven.

Take it out when crisp & little brown, baste it with butter and cut into 3 pieces.

Serve hot with main course dish.

Recipe: Sarson Ka Saag

Ingredients

Mustard leaves 500 gm

Bathua leaves 125 gm

Spinach leaves 125 gm

Salt to taste

Green chilli 10 gm

Red chilli powder 3 gm

Makki ka aata 15 gm

Desi ghee 35 gm

Garam masala 3 gm

Garlic 6 gm

Method

-Clean and wash all the leaves, cook them with desi ghee and green chillies

-Mash together and mix salt, garam masala and cook for a while

-Take another pan; add desi ghee, saute garlic, makki ka aata.

-Add saag mixture to this and check seasoning

-Serve hot and garnish it with white butter.

Dessert Recipe: Gajar ka Halwa

Ingredients

Carrots 500 gm

Desi ghee 100 gm

Milk full cream 1ltr

Sugar 200 gm

Mawa 100 gm

Elaichi powder 3 gm

Dry fruits 15 gm

Method

Clean, wash and grate the carrots, saute them in desi ghee and add sugar.

Cook for a while, add full cream milk, and cook till it reduces. Add mawa, chopped dry fruits and Elaichi powder

Garnish it with chopped dry fruits and it's ready to serve.
