Whole Roast Duck Panang recipe
Owner of Andheri-based eatery Nom Nom shows you how to prepare the bird for your family

 
Ingredients:
1 tablespoon basic red curry paste
1 whole roasted duck
1 cup coconut milk
2 tablespoons fish sauce
4 thinly sliced kaffir lime leaves
2 tablespoons sugar

Method:
Pour 1/2 of the coconut milk in a pan over medium heat. Add curry paste and break it up to mix it with coconut milk. Keep stirring to prevent it from sticking to the bottom of the pan and burning. Lower the heat to simmer if necessary. Simmer until the red oil appears. Add the roasted duck and stir to coat the duck with the curry paste. Add sugar, fish sauce and the rest of coconut milk. The finished dish should have a small amount of sauce, which should not be soupy. It should have just a hint of sugar. Sprinkle the sliced kaffir lime leaves on top. Serve hot with rice.

Panang Curry is a concentrated dry curry. It is generally made with beef or chicken. However, you can also use duck to prepare it. Vegetarians can add tofu instead of beef, chicken or duck.
